Before the plate is served, there are fifteen years in the kitchen. When Luiz Filipe Souza first stepped into one, he knew almost nothing about it. He cooked, washed dishes, organized the stock. He did whatever needed to be done. He learned early on that when you are building something, no task is too small. There is only the next step.

Over time, he understood that cooking wasn’t about executing a technique. It was about building an identity. He
spent years observing, listening, and doing, until the moment came to find his own voice. Not to be different, but to be
true to himself. That is how Oriundi was born at Evvai: a meeting of technique and emotion, tradition and the future.

Fine dining and watchmaking share the same principle: the final result is the sum of its parts. Ingredient by ingredient. Material by material. Nothing by chance. In both crafts, the easy path was available – and it was rejected. That is what brings Acto and Luiz Filipe together: the discipline to go beyond what would be enough, and the clarity to know that there is always something of your own to build.
